1、预冷。预冷是食品在长途运输或冷藏前预先进行的一种冷却方法,其要求是将待贮藏食品快速降至规定温度。它是维护被运输食品的品质和延长贮藏寿命的重要措施。预冷通常在冷库和预冷间进行。常用的预冷方法有自然空气冷却、通风冷却、真空冷却及冷水冷却。经预冷处理后的食品应迅速置入低温环境中贮藏。
